Defaulting the sender's email address

Hi Experts,

Greetings!

I have just recently started studying workflows. Have gone through some tutorials on the website www.saptechnical.com<http://www.saptechnical.com>.
I have a query.It may sound very trivial.
When an agent changes the status of service ticket to 'To be Approved' then an action will get triggered and subsequently a workflow will get triggered which will send an email to the approver.My requirement is that the agent's(the sender's) email address should get defaulted to some specific email address say approver1 at xy.com<mailto:approver1 at xy.com>.
How can we achieve this?
