Hi Kim,
If you are working with a specific industry or cross-industry solution it's worthwhile trying "Scenarios in Applications" in the help for the industry solution also as these are often documented separately.
The link Patrick has given will show all workflows provided in R/3Enterprise.
You do need to check whether these workflows are available in your release.

Is there any central source (book, OSS, SAP website, transaction, etc)
which lists the
SAP Delivered Workflow tasks/templates by module for any given release?
I am aware of transaction OOCU.
