Audit trail - WF log and forms

Dear group,

My client has a credit limit approval process that starts with an
analyst entering some basic data (client name, manager, proposed
credit limit, etc.) and then this data is shown to a number of people
at different levels for them to give their opinion and suggest another
credit limit if necessary. After they have all given their opinion the
document goes to someone who looks at all the opinions and decides
what credit limit to give the client.

(The current process involves a sheet of paper doing the rounds and
everyone writing their opinion on it!)

The proposed solution is to use a form so that the workflow is kicked
off when the analyst enters the basic data and then the form is passed
to the agents in turn. There'll be a text field on the form for each
agent to enter their opinion.

The problem is once the process is over and it comes to audit time.
Even though the contents of the form can be displayed in the workflow
log, the client thinks this is too fiddly and technical and wants an
easier way to see (and be able to show) what the opinions were.

What are other peoples experiences with audit trails - is the workflow
log normally sufficient? If the client won't accept the log then is
there an easier way to display the contents of the form than by
building a report?
