Question about setting up new workflow

I am new to workflow. I am setting up workflow for CRM application. How can I find out delivered work flow in the application. Also what would be the best way of identifying agent

1. Org Structure
2. Responsibility rules
3. Security Profiles

We need to route tickets to sub groups. We are looking at what is the easiest way to maintain workflow.
