General Business Practice in workflow

attachments in Workflow process,
 with Application Object using Generice Object Services OR  with Workitems
using SAP Workplace.
 
 Which should be more applicable keeping archival process in mind (Workitem
/ Application Object)?
 Usually, what is being done to keep the history about the actions on a
document release flow ( like purchase document release flow) ?
 
 Can anybody feed something on this? It is really going to be very useful
for me.
