Event creation

Hi all,
 
I want to create an event to trigger a workflow that distributes faxes.
My idea was that there schould be a table/field that contains the sapoffice document header data. whenever a fax is being received, this table is updated. does anyone knows the name of the table, or how i can trigger this workflow?
every help will be appreciated.
