Hi Aran,

I think that your best bet would be to buy redemption codes from MIT's Apple Store portal for each of the iWork applications (Keynote, Pages, and Numbers).  Just select "Place Departmental Order" via eCAT (https://web.mit.edu/ecat/ecat3/), go to the Apple portal, and search for the application you would like to purchase.  You'll have options to place a volume order of these applications for 50% off of orders of 20 or more seats, or $9.99 per seat.  Alternately, you can purchase copies one at a time at the full retail cost of $19.99.  All of these orders will be tax free, unlike what would be available if you purchased the iWork applications directly through the Mac App Store.  Unfortunately, at this time, third-party applications are not available for order in this manner, only Apple's own applications, which also includes Final Cut Pro and Aperture, for example.

Once you have completed you order, Apple will send you redemption codes for each license you've purchased.  The end user requesting the application will require an Apple ID in order to redeem this code in the Mac App Store (as this is required by all of Apple's stores and online services), however, this does not require a full-fledged iCloud account.  An Apple ID requires the user's name, birthdate, and address, however, this does not require him or her to backup their data to Apple or use any other service from Apple that they do not wish to use.
