[ecco-support] How to interpolate cell-centered grids?

I think I have figured out the solution. The tracers for wind velocity are
already cell-centered ('j', 'i'). So, I have written these lines of code to
convert the model x and y direction velocity to the zonal and meridional
velocity:

and then,

 Anyone please let me know if this is the right approach for the
"cell-centered" variables.
