The same as if you set it up on your own machine,
a Java environment that might be advertised as well
as JBoss, Tomcat, Resin, Jetty Server and Postgres
as a database, not MySQL. Every service that offers
these requirements should be able to provide the
other stuff that you will need depending on your
material to be archived, such as Storage, Bandwidth,
CPU cycles and memory. But you wont find as many as
for common webhosting. You will likely have to ask
a provider of professional services. Besides, there
is one provider specialising in DSpace hosting:

Regarding your question about video, there was a
very knowledgeable Presentation at the User Group
meeting at Gothenburg you might be interested in:

This is probably not very complicated. But, you will
have to become comfortable with DSpace on a test system
before you will be able to set up and run a more complex
solution. Though, the video part is the much more
demanding part of your project.

Perhaps, we could give better advice whether DSpace
is the right solution for you, if you give us some
cornerstones of your project, such as how many people
will ingest into and access the repository, what type 
of organisation runs the repository, Which amount of
items do you expect within the first two years,
whether you are focused on long term preservation,
on detailed metadata, distributed workflows with
differentiated responsibilities within the team
and so on. Besides, I doubt that you will find any 
reliable solution when Java makes you frown.
