"Beauty and the Bourgeoisie:
Historical Geographies of Fruit and Freshness"

Of all the fresh food in the supermarket, fruit is the beauty 
queen.  We are seduced by its color and flawless form, though often 
disappointed by its insipid flavor.  Much has been written about how 
the demands of modern retailing favor fruits that look and travel 
better than they taste. This presentation, however, suggests a more 
complicated story, drawing on examples from California and France. 
The tendencies shaping modern fruit production and marketing date 
back farther than we commonly assume, and they are inseparable from 
the economic, social and cultural relations linking cities and their 
hinterlands. By exploring these  relationships, this paper seeks to 
shed light on the larger history--and
geography--of freshness.
