Substitute profiles are your answer. Assign some distinguishing classifications to the approval standard tasks with PP01 (infotype classification) such "TEM" and "P2P", as relevant. Set meaningful names for the profiles in table T77RP and then assign in T77RO the profile to classification mapping.  Don't forget to include classification NO_CLASS in the mappings, otherwise other workflows without TEM or P2P will be excluded from substitution.

Works great for when you have approval based on spend authorisation, and these values differ between travel expenses and procurement, and for both position and personal substitutes.

Don't use personal subs, but substitute for a position instead. The only
requirement is that you'll need to have your WF's routing by position and
your users will have to exist in multiple positions.

Another way is to use classifications, but that is something you'll have
to apply across all workflows and will make your whole environment more
complex.
