We’ve been seeing a lot of this as well in our sections. In our experience this appears to be connectivity related and once the Exchange server is happy that the connection is stable it will eventually reconnect and accept the email.
Sometimes turning off the WiFi and turning it back on again can re-establish a connection that Exchange is happier with.
