So, I think the executive summary, is that no, you probably can't just
plug any cheapo headset into your Powerbook.  On the other hand, you can
probably use this Plantronics USB headset, which costs $35:

I point out this one in particular because its headset part can be
detached from its USB adapter part and the connection between the two
uses standard microphone/headphone mini-plugs and jacks.  Therefore if
you don't like the headset that the set comes with, you can replace the
headset with any mini-plug cheapo headset designed for a computer.  If,
on the other hand, you want to use a cheapo headset designed for a phone
rather than a computer, you can buy an adapter cable at Radio Shack that
will let you do that.

Alternatively, if you wanted to go wireless, you could buy a bluetooth
USB adapter for your Powerbook and get a bluetooth headset.  That would
be significantly more expensive, though.
